素面羮~美極鮮味露
材料
"紅面線 200克","素面輪 10個","酸筍 少許","木耳 2片","胡蘿蔔 少許","幹香菇 3朵","金針菇 1包","香菜 少許","油蔥頭 3顆","太白粉水 酌量","香油 1茶匙","烏醋 2大匙","素沙茶醬 少許","水 1500cc","醬油 3大匙","美極鮮味露 2大匙","冰糖 1茶匙","白胡椒粉 1茶匙","鹽 酌量","醬油 2大匙","味霖 1大匙","水 2碗"
做法
step1
1: 將乾麵輪與面輪滷汁先滷製至軟透,剪小塊備用~

2: 面線切小段,放入滾水中煮熟,撈起衝冷水去除多餘鹽份,也能增加面體彈性,瀝乾備用,

3: 將香菇泡發後切細絲,木耳~胡蘿蔔~金針菇切細絲,香菜切末,油蔥頭切小末片,

4: 取一炒鍋,放入2大匙油,放入油蔥頭末,爆炒至金黃先撈起油蔥擱一旁,原鍋加香菇爆炒一下,再加入等量的水,加入面線+木耳+胡蘿蔔+金針菇+酸筍一起煮沸,

5: 大滾後加入調味料調味,(因為面線每家鹹度不同,所以鹽量,自己斟酌)

6: 滾個十分鐘後,加入太白粉水勾芡,就可熄火,再加入香油與烏醋增香,

7: 盛碗後,加入面輪,灑上香菜與油蔥酥,和一點素沙茶醬,就完成這道素面羹囉~^^
