that：

陳述句做賓語從句時，用 that 連接，that 在句中沒有實際意義，不能充當句子成分，口語中可以忽略

例句：I think (that) he will come at once.

what:

特殊疑問句做賓語從句時，用 what，when，who，which等引導

例句：I don"t understand what he really wants.

這個區別，其實就是引導名詞性從句的時候二者的區別，因為在其他從句裡面，不會出現what引導句子。

that引導名詞性從句時，在從句中不充當成分，也沒有任何含義（即，不翻譯出來），只起連接作用，在賓語從句中有時可以省略。

what可以引導名詞性從句，作主語、賓語、表語或介詞賓語。that只能作主語、賓語或表語。例如：

3. 引導限制性定語從句

限制性定語從句指的是必不可少的脩飾性從句。在限制性定語從句中，that和what都可以使用。然而，在口語和非正式寫作中，人們更傾向於使用that。例如：

- The person that/who/whom I met yesterday is my new neighbor.(限制性定語從句)

- The thing that/which/what you told me is very important.(限制性定語從句)

總之，what和that雖然都可以引導從句，但在使用中還是要注意其語境和語法等方面的區別。
